Recipe For Lentil Soup

Ingredients:

  • 1 cup dried green or brown lentils, rinsed and drained
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, peeled and chopped
  • 2 stalks celery, chopped
  • 1 tablespoon olive oil
  • 4 cups low-sodium vegetable or chicken broth
  • 1 can diced tomatoes
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • Fresh parsley or cilantro, chopped for garnish

How To Preapre

In a large pot or Dutch oven, heat olive oil over medium-high heat. Add onion, garlic, carrots, and celery and sauté for 5-7 minutes until the vegetables are softened.

Add lentils, broth, tomatoes, and cumin to the pot.

Bring to a boil and then reduce heat to low. Cover and simmer for 30-40 minutes, or until lentils are tender.
